Lemon Soufflé 🍋
📌 Ingredients:
3 eggs (yolks separated from whites)
2 tablespoons sugar
1 tablespoon butter
1 tablespoon flour
150 ml milk
Grated lemon rind + juice of 1/2 lemon
A pinch of salt
Icing sugar for garnish
📌 Method:
- Preheat oven to 180°C.
- In a saucepan, melt the butter, add the flour, and stir gently. Gradually add the milk until creamy.
- Add the egg yolks, sugar, and lemon juice and rind. Stir well.
- In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Fold the egg whites into the cream, little by little.
- Pour the mixture into buttered molds and bake for 20 minutes until puffed and golden brown.
- Garnish with powdered sugar and lemon peel.
