Lemon Soufflé 🍋

📌 Ingredients:

3 eggs (yolks separated from whites)

2 tablespoons sugar

1 tablespoon butter

1 tablespoon flour

150 ml milk

Grated lemon rind + juice of 1/2 lemon

A pinch of salt

Icing sugar for garnish

📌 Method:

  1. Preheat oven to 180°C.
  2. In a saucepan, melt the butter, add the flour, and stir gently. Gradually add the milk until creamy.
  3. Add the egg yolks, sugar, and lemon juice and rind. Stir well.
  4. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  5. Fold the egg whites into the cream, little by little.
  6. Pour the mixture into buttered molds and bake for 20 minutes until puffed and golden brown.
  7. Garnish with powdered sugar and lemon peel.
