๐ฅ๐Peanut Butter and Jelly Cookies
Ingredients:
1/2 cup (1 stick) unsalted butter, softened
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/2 cup jelly or jam (strawberry, grape, or raspberry work great)
Chopped peanuts (optional, for garnish)
Instructions:
- Preheat oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture, mixing just until combined.
- Scoop about 2โ3 tablespoons of dough per cookie and roll into balls. Place them on the prepared baking sheet, leaving space between.
- Use your thumb or the back of a spoon to make a deep well in the center of each cookie (donโt press all the way through).
- Bake cookies for about 10โ12 minutes, until edges are set but centers are still soft.
- Remove from the oven, and while warm, gently press the well again if needed. Fill with about 1 teaspoon of jelly or jam.
- Sprinkle with chopped peanuts if desired. Let cool slightly before serving.
