Ingredients
• 2 cups all-purpose flour
• ¼ cup sugar
• 1 tbsp baking powder
• ¼ tsp salt
• ½ cup cold butter (cut into cubes)
• ¾ cup milk (or heavy cream)
• 1 egg
• 1 tsp vanilla extract
• ½ cup raisins or chocolate chips (optional)
Instructions
- Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.
- Mix dry ingredients: In a bowl combine flour, sugar, baking powder, and salt.
- Add butter: Rub the cold butter into the flour with your fingers until the mixture looks like breadcrumbs.
- Mix wet ingredients: In another bowl whisk milk, egg, and vanilla.
- Combine: Pour the wet mixture into the dry ingredients and mix gently to form a soft dough. Add raisins or chocolate chips if using.
- Shape: Turn dough onto a lightly floured surface and gently flatten to about 1 inch thick.
- Cut: Cut into triangles or rounds and place on the baking tray.
- Bake: Bake for 12–15 minutes until golden brown.
Optional Finish
Brush the tops with milk before baking and sprinkle a little sugar for a golden, slightly crunchy top.
