A creamy, refreshing seafood pasta salad loaded with shrimp, crab, and fresh veggies — perfect for summer! 🌞🥗

Ingredients:

  • 12 oz rotini or fusilli pasta
  • 1 cup cooked shrimp, peeled & deveined
  • 1 cup lump crab meat (or imitation crab)
  • 1 cup cherry tomatoes, halved
  • ½ cup celery, finely diced
  • ½ cup red onion, finely diced
  • ½ cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp fresh dill (or parsley), chopped
  • Salt & pepper to taste

Instructions:

  1. Cook pasta according to package directions until al dente. Drain, rinse with cold water, and set aside.
  2. In a large bowl, combine shrimp, crab, cherry tomatoes, celery, and red onion.
  3. In a separate small bowl, whisk together mayonnaise, sour cream, lemon juice, Dijon mustard, dill, salt, and pepper.
  4. Add the dressing to the seafood and veggies, then add the pasta. Gently toss until well coated.
  5. Chill in the refrigerator for at least 1 hour before serving for best flavor.
