Strawberry Cheesecake Chimichangas
Ingredients:
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup strawberries, diced
- 4 large flour tortillas
- 1/4 cup strawberry jam
- 1/2 cup granola (optional, for extra crunch)
- Oil for frying
- Whipped cream (for serving)
- Fresh strawberries (for garnish)
Instructions:
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Gently fold in the diced strawberries and strawberry jam into the cream cheese mixture. If using, add granola for added texture.
- Place a tortilla on a clean surface and spoon about 2-3 tablespoons of the strawberry cheesecake filling onto the center of the tortilla.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a chimichanga. Repeat this process with the remaining tortillas and filling.
- In a large skillet, heat oil over medium heat for frying. You’ll want enough oil to cover the bottom of the pan.
- Once the oil is hot, carefully place the chimichangas seam-side down in the skillet. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
