Strawberry Cheesecake Chimichangas

Ingredients:

  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, diced
  • 4 large flour tortillas
  • 1/4 cup strawberry jam
  • 1/2 cup granola (optional, for extra crunch)
  • Oil for frying
  • Whipped cream (for serving)
  • Fresh strawberries (for garnish)

Instructions:

  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  2. Gently fold in the diced strawberries and strawberry jam into the cream cheese mixture. If using, add granola for added texture.
  3. Place a tortilla on a clean surface and spoon about 2-3 tablespoons of the strawberry cheesecake filling onto the center of the tortilla.
  4. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a chimichanga. Repeat this process with the remaining tortillas and filling.
  5. In a large skillet, heat oil over medium heat for frying. You’ll want enough oil to cover the bottom of the pan.
  6. Once the oil is hot, carefully place the chimichangas seam-side down in the skillet. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
