🧁 Homemade Milk Muffins 🥣

Ingredients:

6 large eggs (approx. 70 g each with shell)

1 1/2 cups (400 ml) of oil

1 1/2 cups (400 ml) of milk

1 1/2 cups (400 g) of white sugar

4 cups (600 g) of all-purpose flour

2 tablespoons (30 g) of baking powder

2 teaspoons of lemon zest (yellow part only)

A generous pinch of salt (optional, enhances the flavor)

Muffin cups or muffin tins

Step-by-step preparation:

1️⃣ Prepare the oven and tins

Preheat the oven to 180 °C (375 °F)

Place the muffin cups in the muffin tins or lightly grease them if they are metal without paper liners.

2️⃣ Beat eggs and sugar

In a large bowl, beat the 6 eggs with the sugar for 4–5 minutes, until the mixture is frothy, light, and has increased in volume.

This step is key to achieving an airy crumb and a high top.

3️⃣ Add the oil

Add the oil in a thin stream, beating at low speed until fully incorporated.

4️⃣ Add the milk

Gradually add the milk, continuing to mix.

The batter will be creamy and slightly runny.

5️⃣ Flavoring

Add the lemon zest (only the yellow part) and, if desired, a few drops of vanilla extract.

6️⃣ Mix the dry ingredients

Sift the flour, baking powder, and a pinch of salt.

Gradually add this to the wet mixture and mix with gentle folding motions, being careful not to overmix, to maintain the airiness.

7️⃣ Resting the batter

Let the batter rest for 15–20 minutes at room temperature.

✅ This resting time helps the muffins rise with a beautiful, even top.

8️⃣ Filling the molds

Fill each liner ¾ full (makes 30 muffins).

If desired, sprinkle a little sugar on top before baking for a sweet, crispy crust.

9️⃣ Baking

Bake in a preheated oven at 190°C (375°F) for 18–22 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

Do not open the oven before the first 15 minutes to prevent them from collapsing.

🔟 Cooling

Remove from the oven, let cool for 5 minutes in the pan, and then transfer to a wire rack.

Once they are cold, store them in an airtight container to maintain their freshness.
