Turkey Crunch Salad (Low-Carb)

My new favorite easy lunch — light, crunchy, packed with protein, and full of Mediterranean flavor. I didn’t measure much — just eyeballed everything!

Ingredients

1 bag shredded romaine or iceberg lettuce

½ cucumber, diced

½ red bell pepper, chopped

¼ red onion, finely diced

½ cup chopped deli turkey or grilled chicken breast

¼ cup sliced black olives

¼ cup crumbled feta cheese (or mozzarella if you prefer)

1 small handful cherry tomatoes, halved

1–2 tbsp banana peppers or pepperoncinis for a little kick

Sprinkle of oregano or Italian seasoning

Dressing

¼ cup plain Greek yogurt

2 tbsp light mayo (for creaminess)

1 tbsp olive oil

1 tbsp red wine vinegar or lemon juice

½ tsp garlic powder

Salt & pepper to taste

Whisk everything together until creamy and smooth.

How I Made It

Toss all the veggies, meat, and cheese in a big bowl.

Drizzle the dressing over and toss again until everything’s lightly coated.

Chill for about 10 minutes before serving so the flavors blend.

Add a little more feta or pepperoncinis on top if you like that salty-spicy bite.
